upを付けることで主に次のような意味、ニュアンスがつく
(1) 終わる、やりとげる
　（upを付けなくても大きな意味の違いはないが、upを付けることで〜し終えるのニュアンスが出る）
　 add up, clean up, drink up, eat up, grow up, pack up, warm up, dry up, use up, heal up, finish up
(2) 分かれる、分割する
　 blow up, break up, split up, chew up, crack up, cut up, rip up, tear up
(3) 改良する、改善する
　 cheer up, brighten up, freshen up, do up, make up, talk up
(4) 止まる、やめる
　 let up, give up, play up, own up, hold up,
(5) 現れる
　 bring up, come up, look up, show up, turn up
(6) downの反対を意味する
　 get up, hang up, sit up, stand up, turn up

eat up も slice up も up を付けなくても大きな意味の違いはないが、
eat up は(1)の「〜し終える」、slice up は(2)の「いくつにも分割される」とのニュアンスが入ると考えると良いと思う。
ちなみに、it（代名詞）の場合、slice up it とは言えず、slice it up の語順になることに注意。
